How They Are Made:

The Dough: We cream rich, fresh farm butter with powdered sugar, fresh eggs, and a touch of vanilla until smooth, then gently fold in premium flour to create a delicate, melt-in-your-mouth shortbread crust.

The Shape: The pastry is carefully rolled out by hand, precisely cut into classic fluted rounds, and baked to a very light, perfect golden edge. Half of the pieces are cut with a center window to showcase the vibrant filling.

The Finish: Once cooled, two buttery biscuit layers are sandwiched together with a generous dollop of sweet, smooth fruit jam (traditionally apricot or raspberry), creating a perfect balance of rich pastry and fruity sweetness.
